Ingredients:

  • 2 cups/310g Flour
  • 1 tsp/6g Baking Soda
  • 1 tsp /3g Salt
  • 1 cup / 175g Chocolate Chips
  • 1/2 cup/120g Butter
  • 3/4 cup/165g Sugar
  • 2 Eggs
  • 1/4 cup/65g Whipping Cream
  • 1 tsp vanilla
  • 1 cup bananas / 230g ~ 2 medium bananas

Method

  1. Preheat Oven to 350F/175C
  2. Prepare 2 mixing bowls 1 wet bowl, 1 dry bowl
  3. In dry bowl add Flour, Baking Soda and Salt, mix
  4. Add Chocolate Chips to dry bowl, mix. Set dry bowl aside
  5. In wet bowl, cream together butter and sugar
  6. Once creamed add 1 egg at a time until incorporated
  7. Add Mashed bananas and vanilla, mix until incorporated, should still be lumpy
  8. Dump contents of wet bown into dry bowl and fold in until flour is hyrated, shoud stil be lumpy
  9. Fill each muffin cup in the tray 3/4 full, or 3tbsp/55g/65g (double check) per for standard 3″ muffin trays. Fill 115g/130g (double check) per jumbo muffin 3.75″ tray

For standard 3″ tray bake for 25 mins or until internal temp has reached 190F. 39 mins in mikes oven
